Ingredients
3 cups shredded rotisserie chicken
1 (30-ounce) bag frozen shredded hash browns, thawed
1 cup sour cream
1 (10.5-ounce) can cream of chicken soup
2 cups shredded cheddar cheese, divided
1 small onion, finely chopped
6 tablespoons unsalted butter, melted and divided
2 cups crushed cornflakes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. Shred the rotisserie chicken into bite-sized pieces and set aside.
3. In a large bowl, combine the thawed hash browns, chicken, sour cream, cream of chicken soup, 1 1/2 cups of cheddar cheese, onion, 4 tablespoons melted butter, salt, and pepper. Mix thoroughly.
4. Spread the mixture evenly into the prepared baking dish.
5. Sprinkle remaining 1/2 cup of cheese on top.
6. In a small bowl, mix the crushed cornflakes with remaining 2 tablespoons melted butter. Scatter this mixture over the casserole.
7. Bake uncovered for 45–50 minutes, until bubbling and golden brown.
8. Let rest for 5–10 minutes before serving.
9. Garnish with fresh parsley if desired.
