Made with just three main ingredients—Velveeta cheese, Rotel tomatoes, and ground beef—this dip is quick to prepare and absolutely delicious.   • 1 lb ground beef
  • 1 (10 oz) can Rotel diced tomatoes with green chilies (do not drain)
  • 1 lb Velveeta cheese, cubed
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • ¼ tsp chili powder (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess grease.
  2. Add the Rotel tomatoes (including the liquid) to the skillet and stir to combine. Let it cook for 2-3 minutes to blend flavors.
  3. Reduce the heat to low and add the Velveeta cheese cubes. Stir continuously until the cheese is fully melted and the dip is smooth.
  4. Taste and add optional seasonings if desired.
  5. Serve immediately with tortilla chips, crackers, or fresh vegetables for dipping.

Notes

  • Keep it warm – If serving for a party, transfer the dip to a slow cooker on the “warm” setting to keep it creamy.
