Ingredients
2 pounds beef chuck roast, cut into 1.5-inch cubes
4 large carrots, peeled and chopped
4 medium potatoes, peeled and diced
3 celery stalks, sliced
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 bay leaves
1 teaspoon dried thyme
Salt and black pepper to taste
2 tablespoons flour or cornstarch (optional, for thickening)
Instructions
1. Season beef cubes with salt and pepper. Brown in a skillet over medium-high heat until golden on all sides. Set aside.
2. Chop all vegetables into bite-sized pieces and mince garlic.
3. Add carrots, potatoes, celery, and onion to the bottom of the crockpot. Place browned beef on top.
4. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, garlic, thyme, bay leaves, and additional salt and pepper.
5. Pour the broth mixture over the meat and vegetables in the crockpot.
6. Cover and cook on low for 8–10 hours or high for 4–5 hours, until beef is tender and vegetables are soft.
7. For a thicker stew, mix 2 tablespoons of flour or cornstarch with cold water and stir into the stew during the last 30 minutes.
8. Remove bay leaves. Taste and adjust seasoning before serving.
Notes
Searing the beef first isn’t required but adds a lot of flavor depth to the finished stew.
For gluten-free, use cornstarch to thicken and ensure your Worcestershire sauce is gluten-free.
This stew tastes even better the next day after the flavors have had time to meld.
