6 oz cherry or raspberry Jell-O

1 cup crushed pineapple, well-drained

1/2 cup chopped pecans or walnuts (optional)

8 oz cream cheese, softened

1 cup whipped topping or 1/2 cup whipped heavy cream

2 cups boiling water (divided)

2 cups cold water (divided)

Whipped cream (for topping)

Lime zest (for garnish)


Instructions

1. Dissolve the lime Jell-O in 1 cup boiling water. Stir until fully dissolved. Add 1 cup cold water, mix in crushed pineapple and chopped nuts. Pour into a 9×13 dish and chill until fully set (about 45 minutes to 1 hour).

2. In a bowl, beat softened cream cheese until smooth. Fold in whipped topping until fully blended. Spread this creamy layer over the set green layer and chill for another 30 minutes.

3. Dissolve the red Jell-O in 1 cup boiling water. Stir until dissolved, add 1 cup cold water. Let it cool to room temperature, then carefully pour it over the cream layer. Chill again for 1–2 hours until fully set.

4. Cut into squares, top with whipped cream and lime zest before serving.

Notes

Always let each layer fully set before adding the next to avoid colors mixing or melting.

Use room-temperature cream cheese for a smoother creamy layer—lumps can ruin the texture.

Garnish only right before serving to keep whipped cream fresh and visually appealing.
