- 1 pound baby carrots (or peeled/sliced regular carrots)
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: pinch of nutmeg or ginger
- Fresh parsley or thyme for garnish
Instructions
- Rinse and dry baby carrots. If using whole carrots, peel and slice into even sticks or coins.
- In a large skillet over medium heat, melt butter with honey and brown sugar. Stir until well combined.
- Add carrots and toss to coat in the glaze.
- Sprinkle in salt, pepper, cinnamon (and nutmeg/ginger if using).
- Cover and simmer on medium-low for 10–12 minutes until fork-tender.
- Remove the lid, increase heat slightly, and cook for another 5 minutes until glaze thickens.
- Garnish with chopped parsley or thyme.
- Serve warm.
