1 lb ground beef

1.5 lbs baby potatoes, halved or quartered

1 medium onion, finely chopped

3 garlic cloves, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

1/4 cup beef broth or water (optional)

Fresh parsley or green onions, chopped (for garnish)


Instructions

1. Wash and cut the baby potatoes into halves or quarters. Pat them dry.

2. Heat a skillet over medium-high heat. Cook the ground beef until browned, breaking it apart. Drain excess fat and set aside.

3. In the same pan, heat olive oil. Add potatoes cut-side down and cook until golden.

4. Add chopped onion and sauté until soft. Stir in garlic and cook for one more minute.

5. Season with smoked paprika, onion powder, garlic powder, thyme, salt, and pepper. Stir to coat.

6. Add beef back to the pan. Pour in beef broth or water. Cover and simmer until potatoes are fork-tender.

7. Remove lid, let liquid evaporate if needed, adjust seasoning, and garnish with fresh herbs.

Notes

Don’t overcrowd the skillet—work in batches if necessary to get a crisp sear.

For added flavor, top with shredded cheese or a fried egg.

Parboiling the potatoes before frying them can reduce overall cook time.
