Ingredients
1 tablespoon olive oil
1 medium onion finely chopped
2 cloves garlic minced
1 medium carrot chopped
1 celery stalk chopped
2 cups cooked chickpeas or 1 can chickpeas rinsed and drained
4 cups water or vegetable broth
1 bay leaf
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat and sauté onion, carrot, and celery until softened
2. Add garlic and cook for about 30 seconds until fragrant
3. Stir in chickpeas and bay leaf then pour in water or vegetable broth
4. Bring the soup to a boil then reduce heat and simmer for 25 to 30 minutes
5. Mash a portion of the chickpeas to thicken the broth naturally
