1 lb boneless skinless chicken breast or thighs

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup freshly grated Parmesan cheese

3/4 cup heavy cream

1/4 cup sun-dried tomatoes, chopped and drained

2 teaspoons Cajun seasoning (divided)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter (optional)

1 tablespoon fresh chopped parsley

1 bunch broccolini

1 tablespoon olive oil (for broccolini)

Salt and pepper to taste (for broccolini)


Instructions

1. Preheat oven to 425°F (220°C). Trim broccolini and toss with olive oil, salt, and pepper. Roast for 15–18 minutes, flipping halfway, until charred and tender.

2. Cut chicken into bite-sized pieces. Season with salt, pepper, and half the Cajun seasoning.

3. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.

4. Lower heat to medium. Add butter (if using) and minced garlic. Sauté for 30 seconds until fragrant.

5. Stir in sun-dried tomatoes and remaining Cajun seasoning. Add heavy cream and let simmer for 3–4 minutes.

6. Return chicken to skillet. Add Parmesan and stir until the sauce thickens slightly. Simmer 2–3 minutes.

7. Sprinkle with fresh parsley and serve with roasted broccolini.

8. Optional: Spoon extra sauce over the top and finish with more Parmesan.

Notes

For a smoother sauce, use freshly grated Parmesan—pre-shredded doesn’t melt the same.

Don’t overcrowd the pan when searing chicken; cook in batches if needed.

Want extra heat? Add a pinch of red pepper flakes or more Cajun seasoning.
