Ingredients
1.5 lbs chicken thighs or breasts, cut into chunks
3 cloves garlic, minced
3 tbsp soy sauce
2 tbsp honey
2 tbsp Sriracha (divided)
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/3 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp lime juice
Skewers (wooden or metal)
Instructions
1. In a bowl, mix soy sauce, honey, garlic, olive oil, 1 tbsp Sriracha, salt, and pepper to make the marinade.
2. Add chicken chunks and marinate for at least 30 minutes, preferably up to 4 hours.
3. If using wooden skewers, soak them in water for 20–30 minutes.
4. Mix together mayonnaise, sweet chili sauce, 1 tbsp Sriracha, and lime juice to make the Bang Bang sauce. Refrigerate until needed.
5. Thread marinated chicken onto skewers evenly.
6. Preheat grill to medium-high heat and cook skewers for 10–12 minutes, turning occasionally, until chicken is cooked and charred.
7. Brush hot skewers with Bang Bang sauce and serve the rest as a dip.
Notes
Don’t skip soaking wooden skewers—they’ll burn if dry on the grill.
Marinate chicken as long as possible for deeper flavor.
