6 cups peeled, cored, and finely chopped tart apples

2 cups brown sugar

1 cup granulated sugar

1/4 cup lemon juice

1/2 cup water

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1 (1.75 oz) package fruit pectin

1/4 teaspoon ground cloves (optional)


Instructions

1. Peel, core, and finely chop apples into small, even pieces. Toss them with lemon juice to prevent browning.

2. In a large saucepan, combine brown sugar, granulated sugar, water, and salt. Stir over medium heat until sugar dissolves and bubbles form a golden caramel.

3. Add chopped apples, cinnamon, nutmeg, and optional cloves. Stir frequently as apples begin to soften.

4. Stir in the pectin and bring to a rolling boil. Boil for 1 minute.

5. Remove from heat, add vanilla extract, and test consistency.

6. Pour into sterilized jars and seal.

7. Let cool and set for 12–24 hours.

Notes

Mix apple varieties for better flavor.

Stir constantly to avoid burning.

Cook longer if a thicker jam is desired.
