Ingredients
2 pounds beef stew meat or chuck roast, cut into 1-inch cubes
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
2 cups beef broth
1 can (10.5 oz) cream of mushroom soup
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons cold water (for slurry)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Salt to taste
12 oz egg noodles, cooked separately
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides.
2. Transfer the beef to the slow cooker. Add chopped onion and minced garlic on top.
3. In a bowl, whisk together beef broth, cream of mushroom soup, Worcestershire sauce, soy sauce, onion powder, garlic powder, and black pepper.
4. Pour the sauce over the beef in the crockpot. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the beef is tender.
5. (Optional) Mix cornstarch and cold water to make a slurry. Stir it into the crockpot 30 minutes before serving to thicken the gravy.
6. Cook the egg noodles according to package instructions. Drain and toss with a bit of oil or butter.
