  • 2 sheets puff pastry (thawed if frozen)
  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar (plus extra for dusting)
  • 1 teaspoon vanilla extract
  • Optional: fresh berries or chocolate drizzle for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prepare the puff pastry: Unfold puff pastry sheets and place them on the prepared baking sheet. Prick all over with a fork.

  3. Bake for 12–15 minutes, or until puffed and golden brown. Allow to cool completely.

  4. Whip the cream: In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract to soft peaks.

  5. Assemble the cake: Place one puff pastry sheet on a serving platter. Spread with whipped cream. Top with the second sheet.

  6. Garnish: Dust with powdered sugar. Add fresh berries or drizzle with chocolate if desired.
