4 fully cooked chicken sausages, sliced

2 medium zucchinis, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small head of broccoli, cut into florets

1 small red onion, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Optional grated Parmesan cheese

Optional chopped fresh parsley


Instructions

1. Preheat oven to 425°F (220°C).

2. Slice sausage into 1/2-inch rounds. Chop all vegetables into uniform pieces.

3. In a bowl or directly on the sheet pan, combine sausage, veggies, olive oil, and seasonings. Toss well.

4. Spread everything on a large sheet pan in a single layer.

5. Roast for 25–30 minutes, stirring halfway through.

6. Garnish with parsley and Parmesan if desired. Serve hot.

Notes

For extra brightness, add a squeeze of lemon juice before serving.
