1 lb boneless skinless chicken breast

2 tbsp olive oil

1 tsp garlic powder

0.5 tsp smoked paprika

Salt and black pepper to taste

2 tbsp unsalted butter

4 garlic cloves minced

0.33 cup buffalo wing sauce

1 tbsp honey (optional)

1 tbsp fresh chopped parsley

8 oz rotini pasta

2 tbsp butter

2 tbsp all-purpose flour

1.5 cups milk

1 cup sharp cheddar cheese shredded

0.25 cup blue cheese crumbles

Salt and pepper to taste

Optional: dash of hot sauce or cayenne

Instructions

1. In a bowl, season chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper.

2. Heat a large skillet over medium-high heat. Sear the chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.

3. In the same skillet, reduce heat to medium. Add butter, then garlic. Sauté until fragrant.

4. Add buffalo wing sauce and honey, whisk to combine. Simmer 1–2 minutes.

5. Return chicken to skillet and toss to coat in the sauce. Simmer another 2 minutes.

6. Bring a pot of salted water to a boil. Cook rotini to al dente. Reserve 0.25 cup of pasta water, then drain.

7. In a separate saucepan, melt butter. Stir in flour to make a roux, then slowly whisk in milk. Cook until thickened.

8. Lower heat and stir in cheddar cheese, salt, and pepper. Thin with pasta water if needed.

9. Toss drained pasta in cheese sauce, fold in blue cheese crumbles.

10. Plate the cheesy pasta, top with buffalo garlic chicken bites, and garnish with extra blue cheese and celery sticks. Serve hot.

Notes

Don’t overcook the pasta—al dente keeps it from getting mushy in the sauce.
