2 cups cooked white rice

3 cups broccoli florets

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

1/2 cup milk

2 cups shredded cheddar cheese

1/4 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons unsalted butter

1/4 cup chopped yellow onion


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish

2. Cook rice according to package instructions if not already prepared

3. Steam broccoli florets until just tender then drain well

4. Melt butter in a skillet and sauté chopped onion until soft and translucent

5. In a large bowl combine cream of mushroom soup sour cream milk garlic powder onion powder salt and pepper

6. Stir in 1½ cups shredded cheddar cheese

7. Fold in cooked rice broccoli and sautéed onion until evenly coated

8. Spread mixture evenly in the prepared baking dish

9. Top with remaining ½ cup cheddar cheese

10. Cover and bake for 25 minutes then uncover and bake another 10–15 minutes until bubbly

11. Let casserole rest 5–10 minutes before serving

Notes

Use freshly shredded cheddar cheese for the best melt and flavor

Drain broccoli thoroughly to avoid a watery casserole

Add cooked shredded chicken or turkey to turn this into a heartier main dish
