2 boneless skinless chicken breasts

0.5 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon unsalted butter

8 ounces mushrooms, sliced

2 cloves garlic, minced

0.5 cup chicken broth

5.2 ounces Boursin garlic & fine herbs cheese

0.5 cup heavy cream

1 tablespoon fresh parsley, chopped


Instructions

1. Pat chicken dry and season with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.

3. In the same skillet, melt butter and add mushrooms. Cook until browned, about 6-7 minutes.

4. Add minced garlic and sauté for 1 minute until fragrant.

5. Pour in chicken broth, scraping up any browned bits from the pan. Simmer for 2-3 minutes.

6. Stir in Boursin cheese until melted, then add heavy cream and stir until smooth.

7. Return chicken to the pan and simmer, covered, for 8-10 minutes until cooked through.

8. Sprinkle with fresh parsley and serve hot.

Notes

Use room temperature cheese and cream to avoid curdling.

For even cooking, slightly pound the chicken to uniform thickness.
