- 1 lb Beef (sirloin, tenderloin, or flank steak), sliced thinly
- 8 oz Egg Noodles
- 8 oz Mushrooms, sliced
- 1 medium Yellow Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Beef Broth
- 1/2 cup Sour Cream
- 1 tbsp Dijon Mustard
- 1 tbsp Flour
- 2 tbsp Butter
- 1 tbsp Olive Oil
- Salt and Pepper, to taste
Instructions
- Cook the Egg Noodles: Boil salted water and cook the egg noodles according to package instructions. Drain and set aside.
- Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on both sides, then remove and set aside.
- Sauté Mushrooms and Onions: In the same skillet, melt butter. Add onions and garlic, cooking until soft and fragrant, about 2-3 minutes. Add mushrooms and cook for another 5-7 minutes.
- Make the Sauce: Sprinkle flour over the vegetables and cook for 1 minute. Slowly pour in beef broth, stirring, and allow the sauce to thicken for 5-7 minutes. Stir in Dijon mustard and sour cream.
- Combine Beef and Noodles: Return the beef to the skillet, stirring into the sauce. Let it cook for another 2-3 minutes. If the sauce is too thick, add a little pasta water to thin it out.
- Serve and Garnish: Serve over cooked egg noodles and garnish with parsley and Parmesan cheese, if desired.
