  • 4 bone-in, skin-on chicken thighs (or 2 large chicken breasts)
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp dried thyme or rosemary
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
  2. Make the glaze – In a small bowl, whisk together Dijon mustard, honey, minced garlic, soy sauce, olive oil, dried thyme, salt, and black pepper.
  3. Prepare the chicken – Place the chicken thighs or breasts in the baking dish and pour the honey Dijon mixture over them, ensuring each piece is well coated.
  4. Bake for 35-40 minutes (for bone-in thighs) or 25-30 minutes (for boneless breasts), until the internal temperature reaches 165°F (75°C).
  5. Broil for a golden finish – If desired, switch the oven to broil for the last 2-3 minutes to caramelize the glaze.
  6. Garnish and serve – Let the chicken rest for a few minutes before serving. Sprinkle with fresh parsley for added color and flavor.
