Description

Easy and Delicious Corn Fritters — crisp on the outside, tender and sweet on the inside. Made with simple pantry ingredients and sweet corn, these fritters are perfect as a snack, appetizer, or light meal. Customize them with herbs, spices, or cheese for your own delicious twist!


Ingredients

  • 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 large egg
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped green onions or fresh herbs (optional)
  • Oil for frying (canola, vegetable, or sunflower oil)

Instructions

  1. If using fresh corn, cut kernels off the cob. If using frozen or canned, thaw or drain and pat dry.

  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.

  3. In another bowl, beat the egg and mix with milk.

  4. Add the wet ingredients to the dry and stir until combined — batter should be thick.

  5. Fold in corn kernels and optional herbs or green onions.

  6. Heat a thin layer of oil in a large skillet over medium heat.

  7. Drop spoonfuls of batter into the pan, flattening slightly with the back of a spoon.

  8. Cook for 2–3 minutes on each side, or until golden brown and crisp.

  9. Remove and drain on paper towels. Serve hot with your favorite accompaniments.
