Description
Easy and Delicious Corn Fritters — crisp on the outside, tender and sweet on the inside. Made with simple pantry ingredients and sweet corn, these fritters are perfect as a snack, appetizer, or light meal. Customize them with herbs, spices, or cheese for your own delicious twist!
Ingredients
- 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- 1 large egg
- ½ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped green onions or fresh herbs (optional)
- Oil for frying (canola, vegetable, or sunflower oil)
Instructions
- 
If using fresh corn, cut kernels off the cob. If using frozen or canned, thaw or drain and pat dry. 
- 
In a large bowl, whisk together flour, baking powder, salt, and pepper. 
- 
In another bowl, beat the egg and mix with milk. 
- 
Add the wet ingredients to the dry and stir until combined — batter should be thick. 
- 
Fold in corn kernels and optional herbs or green onions. 
- 
Heat a thin layer of oil in a large skillet over medium heat. 
- 
Drop spoonfuls of batter into the pan, flattening slightly with the back of a spoon. 
- 
Cook for 2–3 minutes on each side, or until golden brown and crisp. 
- 
Remove and drain on paper towels. Serve hot with your favorite accompaniments.
