Ingredients
1 can (15 oz) chickpeas drained and rinsed
1/4 cup fresh lemon juice
1/4 cup tahini
1 small garlic clove minced
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
3 tablespoons ice cold water
Instructions
1. Drain and rinse the chickpeas thoroughly. Optionally remove the skins for extra smooth texture.
2. Blend tahini and lemon juice until creamy and whipped.
3. Add garlic, salt, and cumin and blend again.
4. Add half the chickpeas and blend, then add the rest.
5. Slowly add ice-cold water while blending until smooth and fluffy.
6. Add olive oil and blend until silky.
7. Taste and adjust seasoning.
8. Serve with olive oil and toppings.
