Ingredients

Scale

1 bunch kale

2 cups bread cubes

1/3 cup grated Parmesan cheese

1 garlic clove, minced

2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 teaspoon anchovy paste (optional)

1/3 cup mayonnaise

3 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Remove kale stems and chop the leaves into bite-sized pieces. Massage with lemon juice for 1-2 minutes to soften.

2. In a bowl, whisk mayonnaise, lemon juice, garlic, Dijon mustard, anchovy paste, salt, and pepper. Slowly whisk in olive oil to create a smooth dressing.

3. Heat a pan with olive oil, add bread cubes, and toast until golden and crispy, about 5–7 minutes. Season with salt.

4. Toss the kale with the Caesar dressing until coated evenly.

5. Add the croutons and grated Parmesan, and toss again.

6. Serve fresh with extra Parmesan if desired.
