  • 45 lbs Beef Short Ribs (bone-in)
  • 2 tbsp Kosher Salt
  • 2 tbsp Coarse Black Pepper
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Smoked Paprika (optional)
  • 12 cups Apple Juice, Beef Broth, or Vinegar-Water (for spritzing)
  • Yellow Mustard or Olive Oil (binder, optional)

Instructions

  1. Trim excess fat and silver skin from the ribs.
  2. Coat ribs with mustard or oil, then generously apply dry rub.
  3. Let ribs rest at room temperature for 30–45 minutes.
  4. Preheat smoker to 225°F–250°F using hardwoods.
  5. Smoke ribs bone-side down for 3 hours without opening the lid.
  6. Begin spritzing ribs every hour after the 3-hour mark.
  7. Optional: Wrap ribs at 160°F–170°F once bark has formed.
  8. Continue smoking until ribs reach 200°F–205°F and probe tender.
  9. Remove and rest for 30–60 minutes before slicing.
