For the Meatloaf:

  • 2 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 2 eggs
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika (optional)
  • ½ tsp dried oregano or thyme

For the Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat & Prepare – Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. Sauté Aromatics – In a pan, sauté onions and garlic until softened, about 2-3 minutes. Let cool slightly.
  3. Mix Ingredients – In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, seasonings, and sautéed onions/garlic. Mix gently.
  4. Shape the Meatloaf – Form the mixture into a loaf shape on a baking sheet or press lightly into a loaf pan.
  5. Prepare the Glaze – Mix ketchup, brown sugar, Dijon mustard, and apple cider vinegar in a bowl. Spread half over the meatloaf.
  6. Bake the Meatloaf – Bake for 40 minutes, then spread the remaining glaze on top. Bake another 15-20 minutes until the internal temperature reaches 160°F (71°C).
  7. Rest & Serve – Let the meatloaf rest for 5-10 minutes before slicing. Enjoy with your favorite sides!
