For the Meatloaf:
- 2 lbs ground beef (80/20 blend)
- 1 cup breadcrumbs
- 2 eggs
- ½ cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika (optional)
- ½ tsp dried oregano or thyme
For the Glaze:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
Instructions
- Preheat & Prepare – Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
- Sauté Aromatics – In a pan, sauté onions and garlic until softened, about 2-3 minutes. Let cool slightly.
- Mix Ingredients – In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, seasonings, and sautéed onions/garlic. Mix gently.
- Shape the Meatloaf – Form the mixture into a loaf shape on a baking sheet or press lightly into a loaf pan.
- Prepare the Glaze – Mix ketchup, brown sugar, Dijon mustard, and apple cider vinegar in a bowl. Spread half over the meatloaf.
- Bake the Meatloaf – Bake for 40 minutes, then spread the remaining glaze on top. Bake another 15-20 minutes until the internal temperature reaches 160°F (71°C).
- Rest & Serve – Let the meatloaf rest for 5-10 minutes before slicing. Enjoy with your favorite sides!
