2 cloves garlic, minced

1 ½ cups orzo pasta

1 can (14.5 oz) diced tomatoes

2 tablespoons tomato paste

3 cups beef broth

2 teaspoons dried oregano

½ teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil (if needed)

Fresh parsley or rosemary, chopped (for garnish)


Instructions

1. Heat a large deep skillet over medium heat. Add olive oil if using lean beef.

2. Add chopped onion and sauté for 2–3 minutes until softened.

3. Stir in minced garlic and cook for 30 seconds.

4. Add ground beef, season with salt and pepper, and cook until browned.

5. Push the beef mixture to one side of the pan and add orzo to the empty space.

6. Toast orzo for 1–2 minutes, stirring frequently.

7. Mix tomato paste into the pan, then add diced tomatoes and stir.

8. Add oregano and red pepper flakes. Mix everything well.

9. Pour in beef broth, bring to a boil, then reduce heat and cover.

10. Simmer for 12–15 minutes, stirring occasionally.

11. Once orzo is tender and liquid is mostly absorbed, remove lid and stir.

12. Taste and adjust seasoning. Garnish with chopped herbs and serve hot.

Notes

Toasting the orzo before adding liquids adds a nutty, rich flavor.

Use a large skillet with a lid to cook the orzo evenly and avoid sticking.

Stir occasionally during simmering to prevent the orzo from sticking to the bottom of the pan.
