Ingredients
2 pounds boneless, skinless chicken thighs
3 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon oyster sauce
1 tablespoon Chinese Shaoxing wine
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon Chinese five-spice powder
2 cloves garlic, minced
1 teaspoon grated ginger
1/2 teaspoon red food coloring (optional)
Fresh cilantro or green onions for garnish (optional)
Instructions
1. In a large bowl, mix hoisin sauce, soy sauce, honey, oyster sauce, Shaoxing wine, brown sugar, sesame oil, five-spice powder, garlic, ginger, and red food coloring (if using) until smooth.
2. Add chicken thighs and coat them thoroughly. Marinate in a sealed container or bag for at least 3 hours or overnight.
3. Preheat oven to 400°F (200°C). Line a tray with foil and place a wire rack on top.
4. Remove chicken from marinade and place on the rack. Reserve leftover marinade.
5. Roast chicken for 15 minutes.
6. Baste with reserved marinade, flip, baste again, and roast another 10–15 minutes until fully cooked.
7. Broil for 2–3 minutes for caramelization. Watch carefully to avoid burning.
8. Let rest for 5–10 minutes, then slice and serve with rice, buns, or noodles.
