  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 1/2 cups red enchilada sauce (plus extra for bottom of baking dish)
  • 8 medium flour tortillas
  • 2 cups shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sour cream, guacamole, pico de gallo, lime wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add the diced onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for another 30 seconds.
  4. Add chili powder, cumin, smoked paprika, salt, and pepper. Stir well to coat the beef evenly.
  5. Pour in 1/2 cup of enchilada sauce and mix until everything is well combined. Remove from heat.
  6. Warm the tortillas slightly to make them pliable.
  7. Spread a few tablespoons of enchilada sauce on the bottom of a 9×13 baking dish.
  8. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
  9. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  10. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
  11. Remove from oven, let rest for 5 minutes, and top with cilantro and desired garnishes.
