Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon salt

For the cheesecake layer:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter and sugar. Whisk in eggs one at a time, then add vanilla, red food coloring, vinegar, and cocoa powder. Stir in flour and salt until just combined.
  3. Reserve 1/4 cup of the brownie batter for swirling. Pour the remaining batter into the prepared pan and smooth the top.
  4. In a separate bowl, beat cream cheese until smooth. Add powdered sugar, egg, and vanilla extract. Mix until creamy.
  5. Spread the cheesecake mixture over the brownie layer in the pan.
  6. Drop spoonfuls of the reserved brownie batter over the top and swirl with a toothpick or knife.
  7. Bake for 35–40 minutes, until the center is set. Cool completely at room temperature.
  8. Chill in the fridge for at least 2 hours before slicing and serving.
