1 9-inch pie crust, unbaked
1/2 cup unsalted butter
2 oz semi-sweet or dark chocolate
1 cup granulated sugar
2 large eggs
1/4 cup unsweetened cocoa powder
1 tsp pure vanilla extract
1/4 tsp salt
1/4 cup all-purpose flour
3 oz semi-sweet chocolate (for topping)
1/4 cup heavy cream
1 tbsp corn syrup (optional, for shine)
Instructions
1. Roll out or prepare your pie crust in a 9-inch pie dish. Blind bake if desired, and set aside to cool.
2. In a saucepan, melt the butter and 2 oz of chocolate over low heat. Stir until smooth and set aside to cool.
3. In a mixing bowl, beat sugar and eggs together for 2–3 minutes until pale and thick.
4. Whisk in cocoa powder, vanilla, and salt until smooth.
5. Gradually whisk in the cooled chocolate-butter mixture.
6. Fold in the flour gently with a spatula until just combined.
7. Pour batter into prepared crust and bake at 350°F (175°C) for 30–35 minutes, until edges are set and center jiggles slightly.
8. In a small saucepan or microwave, melt 3 oz chocolate and heavy cream together. Stir in corn syrup if using.
9. Spread the topping over the pie while warm. Cool to room temperature or refrigerate before slicing.
