  • 1 egg (beaten)
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

  • ⅓ cup roasted almonds
  • 1 garlic clove
  • 1 tbsp tomato paste
  • 1 tbsp red wine vinegar
  • ¼ cup olive oil
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • Optional: pinch of red pepper flakes

For Assembly:

  • 2 ciabatta rolls (sliced and toasted)
  • 1 cup arugula or baby spinach

Instructions

  1. Make the Romesco Sauce:
Blend roasted red pepper, almonds, garlic, tomato paste, vinegar, olive oil, paprika, salt, and pepper until smooth with a bit of texture. Set aside.
  2. Prepare Chicken:

  3. Bread the Chicken:
