Ingredients

Scale

8 chicken drumsticks (skin-on for flavor)

1 large onion, thinly sliced

4 garlic cloves, minced

2 tablespoons olive oil

1 tablespoon soy sauce

2 tablespoons honey

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon crushed red pepper flakes

Fresh rosemary or parsley for garnish

Instructions

1. Pat the chicken legs dry with paper towels and place in a bowl or tray.

2. In a separate bowl, mix olive oil, soy sauce, honey, garlic, paprika, thyme, rosemary, salt, pepper, and red pepper flakes.

3. Coat the chicken evenly with the seasoning mix and let sit for 10–15 minutes.

4. Layer sliced onions on the bottom of the crock pot.

5. Place the seasoned chicken legs on top in a single layer.

6. Cover and cook on Low for 6–7 hours or High for 3.5–4 hours until fully cooked.

7. Optional: For crispy skin, broil the chicken legs for 3–5 minutes after cooking.

8. Garnish with fresh herbs and serve hot with your favorite sides.

Notes

Letting the chicken sit at room temp before cooking helps it cook evenly.

Browning the drumsticks before placing them in the crock pot enhances flavor.

Avoid lifting the lid often—it slows cooking and affects the texture.
