1 pound ground beef

1 tablespoon olive oil

1 small yellow onion, diced

1 green bell pepper, sliced thin

1 red bell pepper, sliced thin

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes

2 cups beef broth

1 tablespoon Worcestershire sauce

20 oz package refrigerated cheese tortellini

2 cups shredded mozzarella cheese

Fresh chopped parsley for garnish


Instructions

1. In a large skillet over medium heat, heat olive oil. Add ground beef and cook until browned, about 6–8 minutes. Drain excess grease.

2. Add onion, peppers, and garlic to the skillet. Sauté 3–4 minutes until softened. Stir in Italian seasoning, salt, black pepper, and red pepper flakes.

3. Transfer the beef and veggie mixture to the Crock Pot. Pour in beef broth and Worcestershire sauce. Stir well to combine.

4. Cover and cook on low for 4–5 hours or high for 2–3 hours.

5. Add tortellini during the last 30 minutes of cook time, ensuring they are submerged in the liquid.

6. Sprinkle mozzarella cheese on top, cover, and cook for an additional 5–10 minutes until melted.

7. Stir gently, garnish with parsley, and serve hot.

Notes

For a creamier finish, add 2–3 tablespoons of cream cheese in the last 30 minutes of cooking.

To boost umami flavor, a splash of soy sauce or a pinch of smoked paprika works wonders.

Always add tortellini at the end to prevent overcooking and sogginess.
