1.5 pounds beef chuck roast or stew meat

8 ounces mushrooms, sliced

1 medium yellow onion, diced

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

3/4 cup sour cream

4 ounces cream cheese

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (if using cornstarch)

Salt, to taste

Black pepper, to taste

12 ounces egg noodles

1 tablespoon fresh dill or parsley, chopped (for garnish)


Instructions

1. (Optional) Sear the beef in a hot skillet for 2–3 minutes per side to enhance flavor.

2. Add onion, garlic, and mushrooms to the bottom of the crock pot.

3. Place beef on top and pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir gently.

4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is fork-tender.

5. About 30 minutes before serving, stir in the sour cream and cream cheese until smooth.

6. (Optional) Mix cornstarch with water and add to the pot if a thicker sauce is desired.

7. Cook uncovered for the final 30 minutes.

8. Meanwhile, cook the egg noodles according to package instructions and drain.

9. Serve beef stroganoff over the noodles and garnish with fresh dill or parsley.

Notes

Always add sour cream and cream cheese at the end to avoid curdling.

Searing the beef first brings out deeper flavor, but it’s optional.

Use egg noodles, rice, or even mashed potatoes—this sauce goes with anything!
