  • 2 medium zucchini, sliced into ¼-inch rounds
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • Vegetable or canola oil (for frying)

Instructions

  1. Prepare the zucchini – Wash, dry, and slice zucchini into ¼-inch thick rounds.
  2. Set up the breading station – In three shallow bowls, place flour in one, beaten eggs in another, and a mixture of breadcrumbs, Parmesan, salt, pepper, and garlic powder in the third.
  3. Coat the zucchini – Dip each slice into flour, then egg, then the breadcrumb mixture, pressing gently to coat evenly.
  4. Heat the oil – In a large skillet, heat about ½ inch of oil over medium-high heat to 350°F.
  5. Fry the zucchini – Place coated slices in the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
  6. Drain and serve – Remove from oil and place on a paper towel-lined plate. Serve immediately with your favorite dipping sauce.
