For the Salmon Bites:

  • 1 lb fresh skinless salmon fillets, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, whisked
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Oil for frying

For the Bang Bang Sauce:

  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp honey

Instructions

  1. Cut the salmon into bite-sized chunks and pat them dry.
  2. In one bowl, mix cornstarch, paprika, garlic powder, salt, and pepper. In a second bowl, whisk the eggs. Place panko breadcrumbs in a third bowl.
  3. Coat each salmon piece by dipping it first in the cornstarch mixture, then the eggs, and finally the breadcrumbs. Press gently to ensure the breadcrumbs stick.
  4. Heat oil in a deep skillet over medium-high heat. Fry the salmon pieces in batches for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
  5. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the Bang Bang sauce. Adjust spice levels as desired.
  6. Drizzle the sauce over the crispy salmon bites or serve it on the side for dipping. Garnish with chopped parsley or green onions if desired.

Notes

  • For a healthier option, air fry the salmon bites at 400°F (200°C) for 8-10 minutes, flipping halfway through.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer for best results.
  • For extra texture, top with toasted sesame seeds or crushed peanuts before serving.
