For the Salmon Bites:
- 1 lb fresh skinless salmon fillets, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, whisked
- 1 cup panko breadcrumbs
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- Oil for frying
For the Bang Bang Sauce:
- 1/3 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to taste)
- 1 tsp honey
Instructions
- Cut the salmon into bite-sized chunks and pat them dry.
- In one bowl, mix cornstarch, paprika, garlic powder, salt, and pepper. In a second bowl, whisk the eggs. Place panko breadcrumbs in a third bowl.
- Coat each salmon piece by dipping it first in the cornstarch mixture, then the eggs, and finally the breadcrumbs. Press gently to ensure the breadcrumbs stick.
- Heat oil in a deep skillet over medium-high heat. Fry the salmon pieces in batches for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the Bang Bang sauce. Adjust spice levels as desired.
- Drizzle the sauce over the crispy salmon bites or serve it on the side for dipping. Garnish with chopped parsley or green onions if desired.
Notes
- For a healthier option, air fry the salmon bites at 400°F (200°C) for 8-10 minutes, flipping halfway through.
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer for best results.
