For the Cauliflower:

- 1 tsp paprika

- 1/2 cup Greek yogurt or sour cream
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
Optional Garnish:
- Fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash and dry the cauliflower, then cut it into evenly sized florets.
- In a large mixing bowl, toss the florets with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until the florets are golden brown and crispy on the edges.
- While the cauliflower bakes, prepare the garlic sauce. In a small bowl, mix Greek yogurt (or sour cream), minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.
- Once the cauliflower is done, let it cool slightly. Serve warm with the garlic sauce drizzled on top or on the side for dipping. Garnish with fresh parsley, if desired.
