- 1 small yellow onion, chopped
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 1 cup chopped yellow bell pepper
- 2 cups spinach or kale, chopped (optional)
- 1 lb ground chicken or turkey (optional)
- 6 lasagna noodles, broken into pieces
- 4 cups chicken or vegetable broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and black pepper, to taste
- Pinch red pepper flakes (optional)

Instructions
- In a large pot, heat olive oil over medium. Sauté onions until soft, about 3–4 minutes. Add garlic and cook for 30 seconds.
