Ingredients
1 lb penne pasta
1 tablespoon olive oil
1 tablespoon salt
1 lb ground beef
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
0.5 teaspoon onion powder
0.5 teaspoon garlic powder
0.5 teaspoon black pepper
0.25 teaspoon crushed red pepper flakes
2 tablespoons butter
2 cloves garlic, minced
1 cup whole milk
1 cup heavy cream
8 oz Velveeta cheese, cubed
0.5 cup grated Parmesan cheese
Salt and pepper to taste
Chopped parsley (optional garnish)
Red pepper flakes (optional garnish)
Shaved Parmesan or mozzarella (optional garnish)
Instructions
1. Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente (about 9–11 minutes). Reserve ½ cup pasta water, then drain and set aside.
2. In a large skillet over medium-high heat, add ground beef. Break it apart and season with Cajun seasoning, smoked paprika, onion powder, garlic powder, black pepper, and red pepper flakes. Cook until browned and cooked through (7–8 minutes). Set aside.
3. In a medium saucepan, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
4. Stir in milk and heavy cream. Bring to a gentle simmer. Gradually add Velveeta cubes, stirring until melted and smooth.
5. Add Parmesan cheese to the sauce and stir until incorporated. If too thick, add a splash of reserved pasta water. Season with salt and pepper.
6. Combine cooked pasta and beef in the skillet. Pour cheese sauce over and toss gently until fully coated. Simmer 1–2 minutes.
7. Plate and garnish with parsley, red pepper flakes, or additional cheese if desired. Serve hot.
Notes
Taste your Cajun seasoning before adding — some blends are saltier or spicier than others.
Always reserve some pasta water — it helps loosen and emulsify the cheese sauce.
For best flavor and texture, let the finished pasta rest for 2–3 minutes before serving.
