1 pound ground beef

12 ounces penne pasta

8 ounces Velveeta cheese, cubed

1 cup sour cream

1 cup beef broth

1 small yellow onion, diced

2 cloves garlic, minced

1 tablespoon olive oil or butter

1 teaspoon salt

½ teaspoon black pepper

½ cup reserved pasta water (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook penne pasta until al dente, drain, and reserve ½ cup pasta water.

2. In a large skillet, heat olive oil or butter over medium heat. Add diced onion and sauté for 3–4 minutes until soft. Add garlic and cook for 30 seconds more.

3. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat. Season with salt and pepper.

4. Pour in beef broth and bring to a light simmer. Add Velveeta cubes and stir until melted and the sauce is smooth.

5. Reduce heat to low. Stir in sour cream and mix until well combined and creamy.

6. Add cooked penne to the skillet and toss to coat in the sauce. Use reserved pasta water to thin if needed.

7. Serve hot, garnished with black pepper or fresh parsley if desired.

Notes

Cube the Velveeta before adding it to the pan—it melts faster and smoother that way.

Don’t skip the pasta water! It can save your sauce if it gets too thick after mixing.

Reheat gently on low heat and add a splash of milk or broth to restore creaminess.
