These Creamy Tuscan Shrimp are a luxurious yet simple dish perfect for any occasion. Succulent shrimp are coated in a rich, garlicky cream sauce infused with sun-dried tomatoes, fresh spinach, and Parmesan cheese.   • 1 lb large shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in chopped sun-dried tomatoes and sauté for 1-2 minutes to release their flavor.
  4. Pour in heavy cream and stir well. Reduce heat to low and bring the sauce to a gentle simmer.
  5. Add Italian seasoning and Parmesan cheese, stirring until the cheese melts and the sauce becomes creamy.
  6. Toss in fresh spinach and let it wilt in the sauce, about 1-2 minutes.
  7. Return the cooked shrimp to the skillet, coating them in the sauce. Simmer for 2-3 minutes to meld flavors.
  8. Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if desired. Serve immediately over pasta, rice, or with crusty bread.

Notes

  • For extra flavor, add a splash of white wine to the sauce while it simmers.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of cream to loosen the sauce.
  • If you prefer a spicy kick, sprinkle more red pepper flakes before serving.
