- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes (packed in oil), chopped
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach leaves
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Stir in chopped sun-dried tomatoes and sauté for 1-2 minutes to release their flavor.
- Pour in heavy cream and stir well. Reduce heat to low and bring the sauce to a gentle simmer.
- Add Italian seasoning and Parmesan cheese, stirring until the cheese melts and the sauce becomes creamy.
- Toss in fresh spinach and let it wilt in the sauce, about 1-2 minutes.
- Return the cooked shrimp to the skillet, coating them in the sauce. Simmer for 2-3 minutes to meld flavors.
- Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if desired. Serve immediately over pasta, rice, or with crusty bread.
Notes
- For extra flavor, add a splash of white wine to the sauce while it simmers.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of cream to loosen the sauce.
