  • 2/3 cup (160g) Greek yogurt
  • 1/4 cup (60ml) apple cider vinegar
  • 1/4 cup (60ml) extra virgin olive oil
  • 1/4 cup (85g) honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground dry mustard (or 1 teaspoon Dijon mustard)
  • 1 tablespoon poppy seeds
For the Pasta Salad:
  • 1 pound dry pasta (elbow, bow tie, rotini, etc.)
  • 5 cups chopped romaine lettuce
  • 11.5 lbs strawberries, sliced
  • 2 avocados, diced
  • 3/4 cup crumbled feta cheese
  • 3/4 cup (85g) slivered or sliced almonds

Instructions

  1. Cook the Pasta:
    Cook the pasta according to the package directions. Drain and let it cool for 5 minutes.
  2. Make the Poppy Seed Dressing:
    In a medium bowl, whisk together the Greek yogurt, apple cider vinegar, olive oil, honey, salt, ground mustard, and poppy seeds until smooth.
  3. Prepare the Salad Ingredients:
    In a large bowl, combine the cooked pasta, chopped romaine lettuce, sliced strawberries, diced avocados, crumbled feta cheese, and slivered almonds.
  4. Toss the Salad:
    Pour the poppy seed dressing over the pasta salad and toss gently until everything is evenly coated.
  5. Chill:
    Cover the salad and refrigerate for at least 1 hour before serving. For best flavor, allow it to sit for a day or two to let the flavors meld.
  6. Serve and Enjoy:
