Ingredients
2 pounds Yukon Gold potatoes
1 head garlic
4 tablespoons butter
¾ cup whole milk or heavy cream (warmed)
1 teaspoon salt (plus more for boiling water)
½ teaspoon black pepper
1 pound pork sausage (or sausage of choice)
1 small yellow onion, diced
3 tablespoons all-purpose flour
2 cups chicken or beef broth
1 tablespoon olive oil (for roasting garlic)
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft. Set aside.
2. Peel and chop the potatoes into chunks. Add them to a pot of salted water and bring to a boil. Cook for 15–20 minutes until fork-tender. Drain well.
