For the Chicken:

  • 2 large boneless skinless chicken breasts, cut into bite-sized chunks
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced

For the Pasta and Sauce:

  • 12 oz fettuccine or spaghetti
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • ½ cup reserved pasta water
  • Fresh chopped parsley, for garnish

Instructions

  1. Season chicken with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in skillet over medium-high. Add chicken and cook 3–4 minutes per side until golden.
  3. Add butter and garlic to chicken, stir, cook for 1 more minute. Remove and set aside.
  4. Boil pasta until al dente. Reserve ½ cup pasta water. Drain pasta.
  5. In same skillet, melt butter. Add garlic and cook until fragrant.
  6. Pour in cream, bring to simmer. Stir in Parmesan, salt, pepper, and red pepper flakes. Whisk until smooth.
  7. Toss cooked pasta into sauce. Add reserved pasta water if needed to thin.
  8. Return chicken to skillet, toss to combine. Warm through.
  9. Garnish with chopped parsley. Serve hot.
