For the Chicken:
- 2 large boneless skinless chicken breasts, cut into bite-sized chunks
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
For the Pasta and Sauce:
- 12 oz fettuccine or spaghetti
- 2 tbsp butter
- 3 cloves garlic, minced
- 1½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- ½ cup reserved pasta water
- Fresh chopped parsley, for garnish
Instructions
- Season chicken with salt, pepper, paprika, and garlic powder.
- Heat olive oil in skillet over medium-high. Add chicken and cook 3–4 minutes per side until golden.
- Add butter and garlic to chicken, stir, cook for 1 more minute. Remove and set aside.
- Boil pasta until al dente. Reserve ½ cup pasta water. Drain pasta.
- In same skillet, melt butter. Add garlic and cook until fragrant.
- Pour in cream, bring to simmer. Stir in Parmesan, salt, pepper, and red pepper flakes. Whisk until smooth.
- Toss cooked pasta into sauce. Add reserved pasta water if needed to thin.
- Return chicken to skillet, toss to combine. Warm through.
- Garnish with chopped parsley. Serve hot.
