  • 12 oz kielbasa, sliced into rounds
  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 4 cups chicken broth
  • 16 oz potato gnocchi (shelf-stable)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced kielbasa and cook until browned, about 5–6 minutes. Remove and set aside.
  2. In the same pot, sauté the diced onion until soft and translucent, about 3–4 minutes. Add garlic and cook for another 30 seconds.
  3. Sprinkle in the flour, stirring constantly to form a roux. Cook for 1 minute.
  4. Gradually pour in the chicken broth, whisking to combine. Bring to a simmer.
  5. Add the gnocchi and cook for 4–5 minutes, until they float and are tender.
  6. Lower the heat and stir in the heavy cream. Add the spinach and cook until wilted, about 1–2 minutes.
  7. Return the kielbasa to the pot. Stir in Parmesan cheese and season with salt and pepper.
  8. Serve hot with crusty bread or your favorite side.
