1 1/2 cups sharp cheddar cheese, freshly grated

1/2 cup Parmesan cheese, freshly grated

1 tsp Cajun seasoning (additional)

1/4 tsp crushed red pepper flakes (optional)

2 tbsp fresh parsley or chives, chopped

Fresh red chili slices (optional)


Instructions

1. Pat chicken dry; toss with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.

2. Heat olive oil in a large skillet over medium‑high; sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.

3. Boil rotini in salted water until just shy of al dente; reserve 1 cup pasta water, drain.

4. In a saucepan, melt butter over medium; sauté garlic and jalapeño 1–2 minutes. Stir in flour; cook 1 minute.

5. Slowly whisk in warm milk and then cream; simmer gently 3–4 minutes until slightly thickened.
