1 lb large shrimp, peeled and deveined

2 tbsp butter (for shrimp)

3 cloves garlic, minced

1/2 cup chicken broth

3/4 cup heavy cream

1/2 cup parmesan cheese, grated

1/4 tsp crushed red pepper flakes

2 tbsp chopped parsley

Salt and pepper to taste

2 lbs russet potatoes, peeled and chopped

1/4 cup butter (for potatoes)

1/2 cup milk or cream (for potatoes)

Instructions

1. Peel and chop the potatoes evenly. Boil in salted water for about 15 minutes until fork-tender, then drain and return to the pot.

2. Add butter, milk or cream, and seasoning to the potatoes. Mash until fluffy. Cover and keep warm.

3. Pat shrimp dry and season with salt and pepper. In a large skillet, melt butter over medium heat and sear the shrimp for 1–2 minutes per side. Remove and set aside.

4. In the same skillet, sauté garlic for 30 seconds. Add chicken broth and simmer for 2–3 minutes.

5. Stir in cream, parmesan, and red pepper flakes. Let it simmer for 5–6 minutes until thickened.

6. Return shrimp to skillet and simmer another 2–3 minutes. Add parsley and adjust seasoning.

7. Plate the mashed potatoes and spoon shrimp and sauce over the top. Garnish and serve hot.

Notes

Use fresh parmesan cheese for best melting and texture in the sauce.

Don’t overcook the shrimp; they become rubbery quickly.
