2 tablespoons olive oil

2 tablespoons butter (plus extra if needed)

4 cloves garlic, minced

1 ½ cups heavy cream

1 cup freshly grated parmesan cheese

12 oz penne pasta

1 teaspoon Italian seasoning

1 teaspoon salt (plus more for pasta water)

½ teaspoon black pepper

2 tablespoons chopped fresh parsley

¼ teaspoon red pepper flakes (optional)


Instructions

1. Pat chicken thighs dry and season with salt, pepper, Italian seasoning, and red pepper flakes if using.

2. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken thighs 5–6 minutes per side until golden and cooked through. Remove and set aside.

3. Bring a pot of salted water to a boil. Cook penne pasta until al dente. Reserve ½ cup of pasta water, then drain.

4. In the same skillet over medium heat, add more butter if needed. Sauté minced garlic for 1 minute until fragrant.

5. Pour in heavy cream and let it simmer gently for 3–4 minutes.

6. Stir in parmesan cheese until melted and smooth. Add a splash of reserved pasta water to loosen sauce if needed.

7. Toss cooked penne into the sauce and stir until fully coated.

8. Slice or leave chicken thighs whole and serve on top of or next to pasta.

9. Garnish with parsley and extra parmesan. Serve hot.
