Ingredients

2 chicken breasts

250g penne pasta

3 garlic cloves, minced

2 tablespoons butter

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning


Instructions

1. Bring a large pot of salted water to a boil. Cook penne until al dente. Drain and reserve 1/2 cup of pasta water.

2. Season chicken breasts with salt, pepper, and Italian seasoning.

3. In a skillet over medium-high heat, add olive oil and sear the chicken until golden and cooked through (6–7 minutes per side). Remove and let rest.

4. In the same pan, reduce heat to medium and melt butter. Add garlic and sauté for 1–2 minutes.

5. Pour in heavy cream and let it simmer gently. Add Parmesan cheese gradually, stirring until smooth. Thin with pasta water if needed.

6. Toss cooked pasta into the sauce and coat well.

7. Slice rested chicken and place over pasta. Sprinkle more Parmesan and black pepper on top if desired. Serve warm.

Notes

Always use freshly grated Parmesan for the creamiest sauce.

Let the chicken rest before slicing to retain moisture.

Keep the cream at a simmer—not a boil—to avoid curdling.
