For the Salmon:

  • 4 salmon fillets (6 oz each)
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

For the Sauce:

  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp red pepper flakes (optional)
  • 1/2 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the salmon dry and season with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear salmon fillets 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. Lower heat to medium, add garlic, and sauté until fragrant.
  5. Add sun-dried tomatoes and red pepper flakes; stir for 1 minute.
  6. Deglaze the pan with chicken broth, scraping up any browned bits.
  7. Stir in heavy cream, Parmesan, and Italian seasoning; simmer 2–3 minutes.
  8. Return salmon to the skillet and spoon sauce over. Simmer 2 more minutes.
  9. Garnish with chopped parsley and serve hot.
