For the Salmon:
- 4 salmon fillets (6 oz each)
- Salt and freshly ground black pepper
- 1 tbsp olive oil
- 1 tbsp unsalted butter
For the Sauce:
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp red pepper flakes (optional)
- 1/2 cup low-sodium chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the salmon dry and season with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear salmon fillets 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Lower heat to medium, add garlic, and sauté until fragrant.
- Add sun-dried tomatoes and red pepper flakes; stir for 1 minute.
- Deglaze the pan with chicken broth, scraping up any browned bits.
- Stir in heavy cream, Parmesan, and Italian seasoning; simmer 2–3 minutes.
- Return salmon to the skillet and spoon sauce over. Simmer 2 more minutes.
- Garnish with chopped parsley and serve hot.
