Ingredients
1 lb shrimp, peeled and deveined
2 tbsp olive oil
4 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup Parmesan cheese, grated
3 cups cooked white rice
2 tbsp fresh parsley, chopped (plus extra for garnish)
2 tbsp fresh herbs (such as dill or parsley) for rice
Salt, to taste
Black pepper, to taste
Instructions
1. Cook the rice according to package instructions, then toss with herbs and butter. Keep warm.
2. Pat shrimp dry, season with salt and pepper. Heat olive oil in a skillet, sear shrimp 1–2 minutes per side until pink and golden. Remove and set aside.
3. Lower heat, add butter to the same skillet, sauté garlic for 30 seconds.
4. Pour in heavy cream, bring to a gentle simmer. Stir in Parmesan until smooth. Adjust seasoning.
5. Return shrimp to skillet, coat in sauce, and simmer 1–2 minutes.
