2 large boneless, skinless chicken breasts

10 oz can Rotel (diced tomatoes with green chilies)

10.5 oz can cream of chicken soup

10.5 oz can cream of mushroom soup

0.5 cup chicken broth

0.5 teaspoon garlic powder

0.5 teaspoon onion powder

0.5 teaspoon paprika (optional)

Salt and black pepper to taste

8 oz cream cheese, cubed

2 cups shredded cheddar cheese (divided)

12 oz spaghetti, cooked al dente

1 tablespoon olive oil or butter

Fresh chopped parsley for garnish (optional)


Instructions

1. Place chicken breasts in the crockpot and season with salt, pepper, garlic powder, onion powder, and paprika.

2. Add the Rotel, cream of chicken soup, cream of mushroom soup, and chicken broth on top of the chicken. Don’t stir.

3. Cover and cook on low for 6 hours or high for 3–4 hours.

4. Remove the chicken, shred it with two forks, and return it to the crockpot. Stir gently.

5. Add cubed cream cheese and 1.5 cups of cheddar cheese. Stir and cook for another 15–20 minutes until melted and creamy.

6. Boil the spaghetti until al dente, drain, and toss with olive oil or butter.

7. Add the spaghetti to the crockpot and mix well to combine.

8. Sprinkle remaining cheddar cheese on top, cover, and let it melt for 5–10 minutes.

9. Serve hot with fresh parsley and extra black pepper if desired.

Notes

Add vegetables like bell peppers or mushrooms for extra nutrition.

Stir cheeses in only after chicken is cooked to avoid curdling.

Reheat with a splash of broth or milk to maintain creaminess.
